How would you know if your puppy is show standard?

Are you on a co-owner contract with a breeder? Did they sell you a "show quality" pup but will not be involved? Are you planning on owner handling and trying to break in on your own without a mentor?
What experience does the breeder have showing?

As cowpony said, a breeder who shows and knows will have already done a proper dock.

Any procedure done after the pup has already been docked runs real risks, also like cowpony mentioned, as well as permanent pain.

Doing this again, at this age, is an unnecessary risk.

Thinking a bit more on this, it's sad to me that any vet would do a further amputation on a puppy past the 3-5 day old mark, regardless of anesthesia, for a strictly cosmetic procedure.

Keep in mind also that the breed standard is an ideal.

The conformation ring is where a dog is evaluated against the standard. Comparatively few dogs will come close enough to be considered for competition.

The majority of pups even from quality, conscientious breeders will have "flaws" that might keep them from winning in competition but they are raised with the same care and advantages giving us our own wellbred, not just purebred dogs. They are winners to us and that's what should count most.

The tail set is also a factor in the carriage.

From the PCA/AKC Illustrated breed standard on the tail

I believe they are using a correctly proportioned dock in these illustrations and even with that you can see that length alone isn't the issue. To remove enough tail that the non-preferred carriages demonstrate takes you to a very much too short dock.
