Holiday recipe exchange
I didn't know if people might want to exchange family favourites. Here are a couple of mine:
My Mom's old time Cornflake Cookies: 1/2 cup shortening, 1/2 cup brown sugar, 1/2 cup white sugar, 1 well beaten egg, 1/2 tsp. salt, 1 tsp. vanilla, 1 cup cornflakes, 1 1/2 cups flour, 1/2 tsp baking soda, 1/4 tsp. baking powder.
Cream shortening, add sugar then egg. Add dry ingredients and mix. Drop by spoonful onto cookie sheet. Bake at 325 for about 13 minutes. These are awesome dunked in hot chocolate!
Whipped Shortbread: 1 pound VERY soft butter, 1/2 cup cornstarch, 1 cup icing sugar, 3 cups flour. Cream butter until very fluffy. GRADUALLY add cornstarch and icing sugar and whip that until fluffy. Then begin adding flour, a tiny bit at at a time. Keep whipping until mixture looks like thick cream. The more they are whipped the lighter they are. Drop on cookie sheet by teaspoonfuls and bake at 300 for about 23 minutes. These melt in your mouth! Soooooo good! I tried them with unsalted butter and was not happy with them, so stick with salted.
